Easy Peasy Sweet and Salty Sugar Cookies!

There's nothing I love more than recipes that are easy, straight forward and DELICIOUS! Decorating them is totally optional and they are delicious with or without icing! I combined a few recipes that were given to me by friends, made a few changes and the end result was perfection!

Ingredients:
3.5 cups all-purpose flour
1/4 tsp baking soda
1/4 tsp lemon juice
1.5 cups salted butter
1.5 cups granulated sugar
2 large eggs
1 tsp vanilla extract

Step 1
In small bowl, mix together baking soda and lemon juice and then add flour and mix well.

Step 2
In a large bowl, beat together butter and sugar until the mixture is light and fluffy (approx. 2 minutes with an electric mixer). Add the eggs and vanilla and continue mixing for another 1 minute.

Step 3
Add dry ingredients to to the wet mixture and mix until completely blended

Step 4
Divide dough into 3 equal parts and flatten each part into 3/4 inch circles. Wrap with plastic wrap and put in fridge for 2 hours. (If you're in a rush, you can also put it in the freezer for 30-45mins - but check on them often because you want it chilled - not frozen). 
This step is SUPER important. Not chilling your dough will make your cookies lose their shape when you cook them and will also make the dough stick to your cookie cutters! Patience is key :) 

Step 5
Heat oven to 325 degrees F and line 2 cookie sheets with parchment paper. Take out one piece of dough at a time, roll it out on a lightly floured surface until it's about 1/4 inch think. Cut out your cookies using any type of cookie cutter you want. The key for this step is to work quickly. If your dough warms up too much, it will stick to the counter and be more difficult to cut, especially if you're using intricate shapes. If you find the dough is too warm, wrap it back up in the plastic wrap and chill it more!

Step 6
Place cookies on parchment-lined cookie sheets 1 inch apart and back for 12-15 minutes (or until edges are lightly browned). The time for baking will depend on how thick your cookies are.

Step 7
Once cooled, decorate them or eat them as they are!
